Yes, I meal plan but it's only for the meats and that's only so I can take it out in the morning to defrost. I can't plan the entire meal because I may not want that meal that day. Hence the last minute search for a recipe.
This week my craving was for Chicken Gnocchi soup. I had the gnocchi but not the 6 million other ingredients all of the "easy" recipes called for.
As a disclaimer I am NOT a foodie. I cook with the end in mind of feeding my family on a tight budget. My family mostly loves my surprise meals and there aren't usually leftovers.
Here you go!
1 bag of gnocchi (I used spinach)
Shredded chicken (as much as makes you happy)
2 16 oz jars of alfredo sauce
1 cup of milk (I eye balled it but this seems right)
1 tsp Italian seasoning
1 tsp garlic powder
salt & pepper to taste
1. Cook gnocchi as directed on the bag
2. Heat alfredo sauce and milk in a pot. You want it to be soupy but not too runny.
3. Add shredded chicken and seasonings.
4. When gnocchi are cooked add them to the soup.
My chicken breasts were already cooked, so it seriously took me maybe 20 minutes to put the whole thing together.
When I make it again, I'm going to add celery and carrots.
